Your Herb Garden ~ Drying and Storing Herbs

Oven Drying: Place leaves on a baking sheet in a 100 degree oven with door slightly open for approximately 90 minutes. Cool and store in an airtight container in a cool dark place.

Will keep for one year.

Or in the microwave:

Place herbs between paper towel and heat in microwave about 1 minute. Microwave will retain the color better than the oven method.

Store in airtight containers in dark cool place. Will keep for one year.

Note: 1 teaspoon dry herbs equals 1 tablespoon fresh herbs..

Freezing Herbs

Frozen herbs only last about two months and do become limp so they are better used in cooking.

Basil, Marjoram, Tarragon, Mint, Dill and Chives.

1)Blanch the herbs in boiling water.

2)Submerge them in a cold water bath and drain well.

3)Wrap the herbs in plastic wrap or aluminum foil and freeze.
